- 1 box Rigatoni
- 3 tbsp salt, separated
- 2 tbsp olive oil
- 1 (1lb 8oz) large container of Creamland Cottage Cheese
- Handful of fresh chopped parsley
- 1 egg
- 1 tbsp of mozzarella cheese grated
- Black Pepper
- 1/4 jar prepared spaghetti sauce
Cook pasta in a large pot of boiling water with 2 tbsp salt and olive oil.
DO NOT OVERCOOK.
While pasta is cooking place in a food processor: cottage cheese, chopped parsley, egg, grated cheese, 1 tbsp salt and 3 or 4 grinds of black pepper. Process until creamy and smooth and set aside.
Drain pasta well, add cottage cheese mixture and stir well. Add spaghetti sauce and mix. Spray a 13″ x 9″ dish with cooking spray, place a very thin layer of spaghetti sauce in the bottom, add pasta mixture and cover with mozzarella cheese. Bake at 350 degrees for 15 minutes until cheese melts and serve.
